Peanut Butter Oatmeal Chocolate Chip Cookies

Ingredients
- 1 cup flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup sugar
- 1/3 cup light brown sugar
- 1/2 tsp. vanilla extract
- 1 egg
- 1/2 cup rolled oats
- 1 cup semisweet chocolate chips

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
2. Whisk together the flour, baking soda and salt; set aside.
3. On medium speed, cream together the butter, peanut butter, sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
4. Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature.

Seasoned Chicken Strips

Ingredients
- 1/3 cup egg substitute (I used 1 egg)
- 1 tbsp. prepared mustard
- 1 garlic clove, minced
- 3/4 cup dry bread crumbs
- 2 tsp. dried basil
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 lb. chicken tenderloins

1. In a small bowl, combine the egg substitute, mustard, and garlic.  In another shallow bowl, combine the bread crumbs, basil, paprika, salt and pepper.  Dip chicken in egg mixture, then roll in crumbs.
2. Place on a baking sheet coated with cooking spray.  Bake at 400F for 10-15 minutes or until golden brown and juices run clear.

Garlic Lime Shrimp

Another meal I made this weekend, I would like to share.

Garlic Lime Shrimp

Ingredients
- 1 lb. uncooked large shrimp, peeled and deveined
- 5 garlic cloves, minced
- 1/2 tsp. salt
- 1/4 to 1/2 tsp. cayenne pepper
- 1/2 cup butter
- 3 tbsp. lime juice
- 1 tbsp. minced fresh parsley
- hot cooked pasta

1. In a large skillet, saute the shrimp, garlic, salt and cayenne in butter until the shrimp turns pink, about 5 minutes. Stir in lime juice and parsley. Serve with pasta.

Next up, I'm gonna try making Coconut Shrimp.

Nacho Mac'N'Cheese

Wow, my first post of 2012. I can't believe it has been awhile since I posted.  I did so much baking during the holiday season, I've taken a bit of time off.  But I'm back.  I made this delicious meal for dinner tonight, and I would like to share.

Nacho Mac'N'Cheese

Ingredients
- 3 cups uncooked gemelli
- 1 lb. ground beef
- 2 cups chopped sweet red peppers
- 1/4 cup butter, cubed
- 1/4 cup flour
- 1 envelope taco seasoning
- 1/4 tsp. pepper
- 2 1/4 cups milk
- 2 cups shredded cheddar cheese
- 1 cup frozen corn, thawed
- 1 cup coarsely crushed tortilla chips

1. Cook the gemelli according to package directions. Meanwhile, cook beef and red peppers over medium heat until meat is no longer pink; drain.
2. Stir in the butter, flour, taco seasoning and pepper until blended. Gradually stir in milk. Bring to boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in cheese and corn until cheese is melted.
3. Drain the gemelli; add to the beef mixture and stir to coat. Sprinkle with the tortilla chips.
